Hamburger Lentil Stew

Here’s one of my favorite winter stews! (if you double up on the veggies like I do it’s a stew). This is a family recipe that I always loved when my mom made it.

Hamburger Lentil Stew

1 lb lean ground beef
64 oz tomato juice (campbells)
4 c. Hot water
1 c. Lentils rinsed
1 c. Diced carrots
1 c. Chopped cabbage
1 c. Chopped celery
1/2 c. Minced onions
1 bay leaf
1 tsp. Parsley
1 tsp. Salt
1/2 tsp. Pepper

Cook hamburger in soup kettle until crumbly brown, drain fat.
Add tomato juice & hot water; bring to boil.
Add carrots, lentils, celery, cabbage, onion & seasonings; Return to boil. Reduce heat and simmer for 1 1/2-2 hours or until lentils are tender.

The picture is before I simmer it for a while. I really load the veggies in it! 😀
