Motivation revised…

I am one of those people who grew up with a (plastic coated) silver spoon in their mouth. I say plastic coated cuz it’s all a facade…you think your parents have money, but it’s all debt and loans.
Ok, Dave Ramsey talk aside.

I was never taught about life lessons… Well maybe a few really important ones (a few meaning 2), but I wish I could go back and do it over again, but I can’t. So I have to learn things the hard way…like with a steal beam upside the head…

So this week my uncle…my favorite uncle… Had his leg amputated. Necrosis due to untreated infection. I’ll spare you the picture the nurse showed me. It was worse than what I saw on google images. But I had to watch the video I posted earlier again to get motivation for myself. Because this pain I deal with daily is really getting to be a pain in the neck (or back) on my social life…more so the lack thereof.

So I am determined to DO something. It’s gonna be painful – mentally, sleep deprivation, and time consuming. But if I do nothing, nothing happens.

Behold, I have refined thee, but not with silver; I have chosen thee in the furnace of affliction. -Isaiah 48:10

I am feeling that furnace, but I can’t look at the flames or I’ll burn…
I appreciate all who take time to read about my boring life, it helps motivate me.

P.S. those two life lessons…
1) NEVER fight or argue with your spouse in front of your kids. I never once saw them do this when I was growing up…although I think patience grows thin the older you get, I’ve had to reprove one of them lately for this…
2) If your parent offers to pay a hearty reward for good grades…TAKE THEM SERIOUSLY! I missed out on a trip to Europe after my senior year and then they went to Europe and left me home with grandma… So when they offered to pay 3/4 of my tuition in college if I got all A’s & B’s, you betcha I took them serious and got a 3.9 GPA!!

Do you remember that Thomas the Train or whatever he was that said “I think I can, I think I can”. Well I think my train ran out of steam. My train says “I wish I could, I wish I could” 😦
I’ve been pretty stressed about work and traffic and it’s making me more stresses on top of my normal chronic pain. I keep joking that I’m saving for a helicopter to bypass traffic. But…I’ll never be able to repay the loan. So traffic I’ll have to deal with …oh ye my enemy! >:-|
I mean, I LOVE to drive…the open road. Not the clutch pedal for and hour and a half!!! I mean these drivers sprout outta no where like spores! I know it rains a lot here, but really are they growing out of the pollen molecules or something???
Oh wait, my topic was motivation…right. So anyway. I was given unsolicited advice (on a day I was in tremendous pain) “why don’t you just wake up earlier and exercise”. My thought- well…if I got any sleep anyway maybe I would.
I’m burning both ends of the candle at the moment and I think the wick is about up. My next step to being pain free and have more energy is seeing a nutritionist on Friday. I had all the blood work and docs say I’m fit as a fiddle…but I’m not and there’s something WRONG with me! Besides fibromyalgia. I have 0, zilch, nada energy everyday. So I’m hoping food lady will help heal me. Then, I can get more exercise in.
My goal is to make the drive to the Oregon coast. I do realize that the amount of time I sat in traffic (which isn’t really sitting, I just take every back road I can think of while people on the freeway are going 10mph) that I could be at the coast…but for some reason I never get there. The thought of driving to get there stops me though. 😦
So I ran across this video on my massage lady’s site. It puts all my excuses to shame. So watch this video and let me know if it didn’t bring a tear to your eye. Cuz it did me!

Random camera roll shots

Here’s just some random pics of my camera roll. I was looking at my last few posts and wanted to show an updated pic of my lilies. :-} and other stuff too.


And yesterday as I was trying to get some OT in I was stopped in my tracks by this beautiful sky!!! It really didn’t make me want to go into work with the 80° 79% humidity day! (perfect weather for me!!!)


And here’s the GF version of my zucchini bread…smells soooooo good!

I only had 1 loaf pan…
What I learned with my new kitchen aid stand mixer…start beating dry ingredients slooooowly…or it goes *POOF*!!! Oops…

And last but not least…. “Drumroll please!”

All famous Zucchini Bread!!!

Ok, so I’m a little late posting this, but here’s an Oooolllllddddd recipe which is something that I keep planning on making (even buying the zucs) but never get to doing it.
Ugh!!! Time!!…where’ve you been all my life!?!
Ok, enough drama…please enjoy this for me. I think if you want to make this gluten free use Bob’s red mill all purpose flour instead and add 2 tsp of tapioca starch. (I think). Xanthium Gum didn’t quite keep it all together last time.

Zucchini bread

3 eggs
1 cup olive oil
2 cups sugar
2 cups grated zucchini (about 3 small ones)
3 teaspoons GF vanilla

Beat eggs until light and foamy
Then add oil, sugar, zucchini, & vanilla.

In a separate bowl mix together:
3 cups flour,
1 teaspoon salt
1 teaspoon GF baking soda
1/2 teaspoon GF baking powder
1 cup chopped nuts (optional)
3 HEAPING teaspoons cinnamon.

Slowly while stirring, add dry ingredients to batter.
Grease bottom and sides of loaf pans, add batter.
Bake at 325 for 1 hour. (I usually check the center with a toothpick at 45 min. If it comes out clean it’s done).
Makes 2 loaves.

It’s been a bit Chili here lately…

It’s been a while since my last post. Been working and been tired, workin on not being tired. I have been craving some different foods lately so here’s a recipe I altered to satisfy that craving. (my cravin was corn)
It’s simmering now and smells spicy! Mmmm very yummy on a cold drizzly pouring wet day.

Chicken Corn Chili
1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
32 fluid ounce chicken broth (24 oz. for thicker chili)
1 (8 oz) can water
2 diced tomatoes
1 (4 oz) can green chilies, undrained
1 (1.25 ounce) package taco seasoning
1/8 tsp cayenne
1/4 tsp garlic powder
1/4 tsp red pepper flakes
1/2 tsp cumin
3 whole skinless, boneless chicken breasts cooked, seasoned, &cubed
shredded Cheddar cheese (optional)
sour cream (optional)
Cilantro (optional)
crushed tortilla chips (optional)

Place the onion, chili beans, black beans, corn, tomato sauce, chicken broth, diced tomatoes, diced chilies, and diced chicken in a slow cooker. Add taco seasoning, cumin, cayenne, red pepper flakes, and garlic powder, stir to blend.
Set slow cooker for low heat, cover, and cook for 5-7 hours.
Serve topped with shredded Cheddar cheese, a dollop of sour cream, cilantro, and crushed tortilla chips, if desired.

If you added too much spice you might look like this guy. Ain’t he CUTE!! :]
