Here’s a quick recipe that I tried out today. I made it into fish tacos (a first for me) but I really couldn’t taste the salmon in all the veggies I piled in my exploding taco… So you may just want to eat the salmon alone with chips and salsa or texas caviar (check the archives for that recipe!) on the side.
So here’s the recipe:
1 lb fish (salmon or whatever)
1 Tbs lemon juice
1 Tbs olive oil
1 tsp chili powder
1/2 tsp cumin
1/4 tsp salt
1/4 tsp ground black pepper
Turn on oven to 450° and preheat with ovenproof pan in oven.
Whisk together lemon juice, oil, chili powder, cumin, salt, and pepper. Pour over fish. Turn fish to coat with marinade.
Cover and chill for 15 minutes.
Drain fish, discard any marinade.
Cook skin side down for 12 minutes until flaky. Mmmm!!!
*Make sure you use oven mitts to take pan outta the oven. I “almost” grabbed it not thinking. Then “almost” did it again when pan was on the stovetop.
