Roasted Red Pepper Hummus

I can’t believe this month went by so fast! I have been so sick lately with stomach issues and then my normal stuff x10 so it’s not been a fun one. I have had no motivation to cook or anything lately and basically been living on raw veggies and hummus. One good thing out of all this is that by no mental effort, I’ve hit my goal weight. (Sorry if that offends anyone!) So I’m happy about that, but I wish my stomach would cooperate! I still have a bunch of tests to run to figure out the problem. Sometimes I feel like a genetic defect and they should just start over and hit the reset button!
I have a feeling my diet will be changing drastically in the next few months, so there might be some yummy recipes coming. (Here’s hoping!)
I mentioned in my last post that I was going to try a kale basil hummus…and it was not that tasty, so I’ll spare you from trying it too. I think mainly my beans weren’t cooked enough and the consistency was not great (I cooked mine in the pressure cooker). But this one is great and two of my co-workers were loving it today. 😀
I’m also glad it’s payday week because I just had to clean out my veggie drawer that wasn’t looking too happy. 😦
So here’s the recipe, now back to being conformed to my work chair another 5 hours.

Roasted Red Pepper Hummus
• 2 large garlic cloves, chopped
• 3-4 cups cooked garbanzo beans (chick-peas), drained
• 1/3 cup tahini (sesame seed paste)
• 1/4 – 1/3 cup fresh lemon juice
• 1 red pepper seeded, chopped & roasted (I did mine in a toaster oven on broil)
• 1/2 tsp salt (if using dry beans, 1/4 tsp if using canned)
• 1/4 tsp dried parsley
• 1/4 cup olive oil (add however much you like for consistency)
• 1/4 tsp smoked paprika
• 1/8 tsp cumin

How to:
– To prepare garbanzo beans in pressure cooker, add 7 cups of water/chicken broth to 2-2.5 cups dry (rinsed) beans.
– Seal top, and cook according to your pressure cookers instructions for 25-30 minutes.
– Rinse, de-seed and cut in large chunks your red pepper and put on broil until it’s looking roasted. Maybe 15 minutes? I didn’t put mine right next to the heat so it could take less time, just keep checking it.
– Once all that is ready, drain beans, peel garlic, juice lemon, dump all ingredients and spices in food processor except oil.
– Turn on to low setting until it’s starting to look smooth.
– Turn up to high setting and drizzle in olive oil from the opening in lid until it starts to get the consistency you like.
– Taste test to see if it needs tweaking, then either refrigerate for an hour to enhance flavor, or devour and leave no trace behind. 😉

Did everybody miss me?

Today was my first day back from vacation to work and the first thing I see on my desk is Fred. He is a striped beetle of some sort. Just hanging out in a canister…they were all surprised I didn’t scream, had Fred been loose then that would have been a different story!

About the title…it’s not that you all missed me, it’s all these animals missed me! My bird was so stressed out at birdie-sitting that he didn’t touch his regular food and only ate his treat millet. 😦 he also lost .2 ounces, which is like 5 lbs to humans. That scared me since he’s 14 years old! Shoving walnuts down him to fatten him up!!! He’s also wanted to become my second skin and crawl under mine any possible moment. Under my chin, back of neck, palm of hand, he even crawled in my sleeve the other day. He’s gone crazy! Must contain the birdie love…
The other guy who missed me was Mr. Higgley. He was whining at my desk all morning and would not leave me alone! Hard to get work done when you have a bulldog DEMANDING your attention.
Today was not a good day though. I thought it awesome that I can order pizza online so I got a GF no cheese pizza from Bellagio’s. as I was eating it I thought wow this GF crust tastes just….like….the…. Um…. GRRRR!!!! Called them up and ask how they tell the difference between Gluten Free and Gluten FULL… They totally gave me the wrong crust!!! O.o
I ate a whole slice too. :(… That is the most gluten I’ve eaten in 2 years. I instantly felt this lump in my stomach. Then gradually felt it digest….I don’t normally feel my food digesting….so this is not good. I was curious to see what my body would do. The worst part was the achy joints later in the day and the extreme fatigue. I’ve been laying in bed pretty much since I got home. I did ask for a refund and a GF pizza. I actually like GF crust way better.
I think Higgley was feeling sorry for me too cuz he totally tossed his doggie cookies today. He looked so sad afterwards! We were both a hot mess.

While I was waiting for my second pizza, my co-worker and I went for a walk along the bluff in Oregon City. Such a pretty day. It’s hard to believe all this industrial ruins will one day be retail and condos! That’s a lot of work coming within the next few years. BTW I heard this waterfall is the widest waterfall next to Niagara in the US. Hard to believe, I haven’t researched it either but I thought it a cool fact.

And last picture for today is last nights sunset (bottom pic) and tonight’s (top pic). I was closing up everything when I saw how beautiful the sunset was tonight! I was trying to load the 4990 photos from the wedding I took in San Antonio this weekend and so I had to use my iPhone for tonight’s shot. The bottom shot was with my new camera. Canon T5i. I LOVE IT! More pics and reviews on it and my new camera bag coming soon….
Time to rest these achy bones. TTFN!

A Day in the Life of Higgley

Do you remember the Taco Bell commercials from way back when of the doggie saying in his accent “I think I’m in LUV”… Well I think I’ve fallen.
He’s short, white, and slightly wrinkly.
I didn’t think I’d miss him till he was gone at the beach for two days. I needed my Higgley fix!
I’m mean who can resist a face like this?!? (As my bird is extremely jealous that I’m writing this post…)

Don’t let the underbite scare you….he’s the sweetest dog I’ve ever met!! He’s not a drooly dog (except after a drink of water). He LOVES to be beaten on (like Rolfing pats, not abuse), doggie spa treatment massages, treats galore… We make him work for it though. 😉
I’m not a dog person either so this is kinda scaring me. Although I miss petting my kitty’s who have taken their 9th life. And my birdie I can barely pet with one finger and he squawks like I’m bruising him…(he’s 14 years old). So it’s nice to have a dog you can give a good pat on the back and a chin scratch to help de-stress and relax. :]
This is not my dog, it’s the owners of my work. So when I just need to take a break from the computer I call him over and he just plops down for his lov’ins. :-] occasionally I’ll give into his boredom and play tug-o-war and get him riled up so he’ll get wore out and then SNORE….oh how jealous he makes us to be able to sleep at the job. 😉 I usually blame his snoring on a co-worker. Lol!
Oh how much joy a little animal could bring. He was kinda a rescue dog. He had cherry eyes and the original owners could not afford the surgery. So one man paid for the surgery until a good home could be found. A co-workers wife works at that surgery clinic and knew the owners of my company was looking for a bulldog, so they snatched him right up. I’m glad he got another chance. :-}
